2 c. dried split green peas, soaked
1 small onion, chopped
1 c. carrots, chopped
2 stalks celery, chopped
1 Tb. olive oil
1 tsp. cumin
1 Tb. tomato paste
2 plum/Roma tomatoes, chopped (or a can of chopped tomatoes)
2 Tb. chicken soup granules or 2 cubes chicken bouillon
1 Tb. dried parsley flakes or 2-3 Tb. chopped fresh parsley
salt & pepper to taste
4 c. water


Optional:
sour cream
scallions, chopped

Directions:
Directions:
Soak peas overnight.

Sauté onions, carrots, and celery in olive oil until the onions are translucent. Stir in cumin. Allow spice to bloom. Add in remaining ingredients.

Bring to a boil. Reduce heat and simmer for 2 hours. Refrigerate overnight.

Purée in blender. Reheat. Add water if too thick.

This is nice served with a dollop of sour cream and chopped scallions, just make sure the chicken bouillon used was pareve.
