3 c. carrots, diced
1 c. celery, sliced
3/4 c. onion, diced
4 c. red potatoes, peeled and diced (about 1˝ lb.)
10.5 oz. prepared veggie broth or pareve chicken stock
1/3 c. all-purpose flour
2 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground nutmeg
3/4 c. dry white wine
3/4 c. grated cheddar cheese (3 oz.)
1/4 c. grated Swiss cheese (1 oz.)

Directions:
Directions:
Coat a large Dutch oven with spray. Place over medium-high heat until hot.

Add onions, celery, and carrots. Sauté about 8 minutes.

Add potatoes and broth. Bring to a boil. Cover and reduce heat.

Simmer until tender, about 30 minutes.

Place flour in a bowl. Gradually add milk, blending with a whisk. Add to pan.

Stir in seasonings. Cook 2 minutes until thickened. Add wine. Cook another minute.

Remove from heat and add cheese. Stir until cheese melts.
