1½ lb. Chicken Gizzard
1½ Tbsp. Seasoning Salt
¼ tsp. Cayenne
½ c. (more or less) Flour
¼ tsp. Black Pepper
Vegetable Oil, for frying

Directions:
Prep gizzards, discard any hearts if any are present. Cut away excessive fat and gristle, then wash gizzards thoroughly under running cold water. Parboiling: Place gizzards in a pot of cold water, bring water to a rolling boil, boil for 15 minutes. While the gizzards are boiling, prepare the mixture for the gizzards. Combine flour and seasoning salt in a paper or plastic bag. Shake well and set seasoned flour mixture aside. Once boiling is finished, pour into a strainer and allow the gizzards to cool. Preheat enough oil for frying in cast iron skillet with a lid. Thoroughly coat the gizzards with seasoned flour mixture and place in hot oil; do not overcrowd the skillet. Cook gizzards on both sides until brown. Lower heat to medium, cover skillet with the lid and cook an additional 10 minutes. Once done remove from skillet and allow to drain on paper towels.
