2 ripe tomatoes
2 garlic cloves
1/2 Jalapeņo pepper
2 Tb. extra virgin olive oil
salt & pepper to taste

Directions:
Directions:
Process tomatoes, garlic cloves, and Jalapeņo in a food processor.

Drizzle in about 2 Tb. EVOO very slowly, until thick and emulsified.

Season with salt and pepper to taste. Refrigerate.

Go really slow with the olive oil. You can put a plastic cup in the feeder with a tiny hole in the bottom which will allow it to drip out slowly. If you don't have the pepper, you can use red pepper flakes. I have also used dijon mustard instead of Jalapeņo, which is tasty. ~Mom
