5 T. unsalted butter
1/2 c. sugar
1/2 tsp. lemon zest
3/4 c. sour cream or plain yogurt
1 large egg
1 1/2 tsp. baking powder
1/4 tsp. soda
1/4 tsp. fine sea salt
1 1/4 c. to 1 1/2 c. blue berries, fresh or frozen
3 T. turbinado raw sugar

Heat oven to 375º. Line muffin cups (9). Melt butter in bottom of large bowl, whisk in sugar, zest, sour cream, and egg until smooth. Whisk in baking powder, baking soda and salt until combined, then lightly fold in flour and berries. Batter will be thick, like cookie dough. Divide between 9 muffins. Sprinkle each with 1 tsp raw sugar. Bake for 25-30 minutes, until tops are golden and a tester comes out clean, cool in pan 10 minutes then rest of the way on a rack.
