1 1/2 c. flour
3 1/2 T. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. milk
3/4 c. ricotta cheese
3 large eggs
1 tsp. vanilla
2 T. lemon zest
1/4 . fresh lemon juice
1 T. melted butter

Directions:
Directions:
In a mixing bowl whisk dry ingredients for 20 seconds. In a separate bowl, whisk together milk, ricotta, eggs, and vanilla. Add butter, lemon zest and lemon juice to milk mixture. Pour milk mixture into dry. Whisk until combined should be slightly lumpy. Pour a scant 1/3 c. onto heated and buttered skillet, cook until bubbles begin to appear, flip and cook till golden brown. Serve with fresh berries and warm syrup. Berry jam or berry syrup is especially nice with these pancakes.
