5 lbs Yukon Gold or small red potatoes
1 onion, chopped into small dice
2 carrots, chopped into small pieces
2 stalks of celery, chopped into small dice
1 c Hellmanns mayonnaise
1 T lemon juice
Salt to taste
Pepper to taste
Sweet paprika for decoration

Directions:
Directions:
Boil potatoes until tender but still firm.
If using Yukons, let cool under cold water and peel. If using small reds, cool under cold water, peeling is not necessary.
Cut potatoes into chunks about 3/4” square.
Add vegetables, lemon juice and mayonnaise and mix well.
Salt and pepper to taste.
Smooth down in bowl and sprinkle with sweet paprika.
