Cranberry Orange Muffins Recipe

1/3 c Dried Cranberries
1/3 c plus 2 T sugar
3 T boiling water
1 3/4 c flour
1/2 c cornmeal
2 1/2 t baking powder
1/2 t baking soda
1/2 t salt
2 eggs
1 c milk
1/3 c unsalted butter, melted
1 T orange zest
1/2 c chopped walnuts (optional)
Sugar crystals (optional)

In bowl, stir cranberries plus 2 T in boiling water. Let sit 15 min.
In large bowl, mix flour, cornmeal, 1/3 c sugar, baking powder, baking soda and salt.
Add milk and melted butter.
Beat until smooth.
Stir in cranberry mixture and orange zest. Stir in walnuts if desired. Sprinkle crystal sugar on top if desired.
Bake at 400 for 15-20 min. in greased muffin tins.

This recipe can be made into a bread as well. Bake at 350 for 40 min. Use toothpick to check if done.
