1 pkg frozen spinach, defrosted
1 onion, sliced thin, sautéed until light brown
2 c cream - or - 1 c cream, 1 c milk
4 eggs
1 pkg Swiss cheese shredded
1 pie crust, unbaked
Sprinkle of garlic salt
Sprinkle of nutmeg (optional)

Directions:
Directions:
Squeeze water out of spinach.
Place on the bottom of pie crust, sprinkle with garlic salt.
Top with sautéed onions then shredded Swiss cheese.
Beat eggs.
Mix cream with eggs well, sprinkle with nutmeg or not.
Pour into pie tin, covering the spinach, onion, cheese.
Bake at 425° for 15 minutes, then lower oven to 350 for 20 minutes until puffed and set.

You can use many different kinds of vegetable and cheese mixtures. Try broccoli and cheddar. Discover your own! Experiment! Just keep the egg cream mixture constant.
Use a store bought pie crust, don’t knock yourself out.
