Spinach PomPoms Recipe

2 pkgs frozen chopped spinach, defrosted
2 c herb stuffing, crushed
1 c grated parmigiana cheese
6 eggs
Dash of nutmeg
3/4 c softened

Dipping Sauce
1/3 c dry mustard
1/2 c sugar
1/2 c vinegar
1 egg yolk

Directions:
Directions:
Squeeze out spinach, removing as much water as you can
Combine all other ingredients.
Shape into balls.
Place on greased cookie sheet.
Bake 350° for 10-15 minutes until set.

Dipping Sauce
Combine mustard and vinegar
Cover and leave overnight.
Next day, combine vinegar mixture with sugar and egg yolk.
Simmer until thick.
Serve with Pompoms!

Put stuffing in plastic bag and crush with rolling pin. The finer the better.
