1 lb ground beef
10 oz enchilada sauce
12 oz whole kernel corn, drained
16 oz refried beans
12 soft corn tortillas
15 oz can black beans, drained & rinsed
14 oz petite diced tomatoes, undrained
3 C shredded cheddar (or mexican blend)
1 Tbsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
3/4 tsp salt

Directions:
Directions:
Preheat oven to 350º.
Cook & drain beef.
Spread 1/2 enchilada sauce in bottom of dish.
Spread 1/2 beans on 6 tortillas. Place bean side up in dish, overlapping to fit.
Stir together remaining enchilada sauce, corn, black beans, spices, beef & tomatoes.
Spread 1/2 mixture over tortillas, then 1 C cheese.
Repeat layering, ending with sauce & cheese on top.
Bake, uncovered, 35 mins.
Center should be hot & bubbling around edges.
