Ingredients:  
1 lb ground beef
1 yellow onion chopped
1/2 green bell pepper chopped finely
2 garlic cloves minced
2 T ketchup
2 T brown sugar
2 T rice vinegar
2 T low sodium soy sauce
1/2 c pineapple juice from can of pineapple tidbits
1 c canned pineapple tidbits, drained
1/2 red bell pepper cut into 1" chunks
1/2 green bell pepper cut into 1" chunks

Directions:
Directions:
Add the beef, onions, 1/2 of a green bell pepper and garlic to a large frying pan and cook until the beef is cooked through and the onions are softened.
Add the ketchup, brown sugar, rice vinegar, soy sauce and pineapple juice and cook for 3-4 minutes then add in the pineapple tidbits and bell peppers pieces. Mix well and cook for an additional 3-4 minutes to soften the bell peppers. Serve over rice.

Didn't have rice wine vinegar so I substituted apple cider vinegar and wanted to use up some already cooked chicken breasts so I chopped them all up and threw them in after I cooked the peppers and onions. Also as a side note, I never actually use green peppers. Just went with red and orange this time. It was very good.
