Ingredients: 8 oz. baked sweet potatoes 5 tbsps. coconut flour 8 eggs ¼ tsp. pink salt ½ tsp. garlic powder ⅓ tsp. everything seasoning coconut oil (for the pan)

Directions:Preheat oven to 450ºF.
You can put the potatoes in instantly. I like to put them on top of a cooling rack on top of the sheet (which I line with foil for easy cleanup). Bake the potatoes all the way through.
Beat eggs in a large bowl. Scoop out the flesh of the potato and add to the bowl while still warm. Coat pan with coconut oil over medium heat.
Be patient and let it warm up. Scoop in the mix to the size of your liking. I then use my spatula or the back of a spoon to flatten them out so they will be thinner and not burn on the bottom.
Serve with Lakanto Sugar-Free Maple Syrup that you can find on Amazon or at Fresh Market. It tastes JUST LIKE maple syrup (the sweetener is monk fruit). |

It makes a decent amount of batter. I can make 12 small-medium sized pancakes and still have leftover batter that keeps in the fridge for a week or so.
