1 pkg. frozen puff pastry,thawed
3 roma tomatoes,sliced thin
8 oz.mozzarella cheese,shredded
4 oz. Feta cheese,crumbled
1/2 small onion,chopped fine
1 clove garlic minced
Fresh herbs such as basil,chives,oregeno,parsley,rosemary,tthyme or dried herbs can be substituted

Preheat oven to 400º

Slice tomatoes thinly and lay on paper towels.Sprinkle lightly with salt to remove moisture.After 20 minutes wipe with paper towel tp remove salt.

Roll out 2/3 of puff pastry.Place on ungreased pan.With the 3rd sheet of pastry cut 4 strips to make edge around the 2/3rd already rolled.
Prick all over generously with fork.
Bake in preheated oven for 10-12 min until golden brown.
Remove from oven and place on cooling rack for 10 min.

When cool,layer with mozzarella cheese,then crumbled goat cheese.
Sprinkle chopped onion and minced garlic over cheeses.Lay the tomatoes on top in an even pattern.Sprinkle with fresh or dried herbs.Drizzle lightly with
olive oil.Bake in 400º oven for additional 10 min.until cheese is melted. Cool before cutting into squares.
