2 cod fillets
¾ lb white new potatoes (about 6-7)
1 red onion
1 zucchini
2 cloves garlic
1 bunch mint
1 oz green olives (about 8)
1½ Tb red harissa paste
2 Tb mayonnaise
2 Tb rice vinegar
2 tsp honey (can use sugar)
1 Tb za'atar

Preheat oven to 450º.

Prepare vegetables. Large dice potatoes and zucchini. Small dice onions, garlic, and olives. Separate mint from stems.

Toss potatoes in salt, pepper, and olive oil. Roast on pan, middle rack, for about 20 minutes.

Combine honey, vinegar, and half of onion. Marinate at least 10 minutes.

Combine mayonnaise and harissa.

In a large pan, sauté zucchini and other half of onion in olive oil (about 4 minutes). Add garlic. Salt & pepper to taste. Cook about 1 more minute. Cover with foil to keep warm.

Dry fish. Season with salt, pepper, and za'atar on both sides. Sauté in olive oil, 2-3 minutes per side. *If you substitute salmon it will need to cook longer, about 5 minutes skin side down, then 2 on the other side. For salmon, don't season skin side.

Add olives and half of the mint to the pickled onions. Tear the mint before adding. Add a drizzle of olive oil and salt and pepper to taste.

To serve: spoon the harissa mayo on a plate. Spread evenly. Layer with potatoes, zucchini, cod, and pickled onions (do not drain out the liquid from onions). Top with remaining mint, torn.
