2 tablespoons unsalted butter
2 tablespoons canola oil
1 cup graham cracker crumbs
1 cup cornflakes, crushed
1/2 teaspoon ground cinnamon
3 large eggs, lightly beaten
2 tablespoons brown sugar
1 cup whole milk
1/4 teaspoon kosher salt
2 teaspoons vanilla extract
8 slices brioche or challah bread

Directions:
Directions:
In a large nonstick skillet over medium heat, melt butter and canola oil.

In a shallow bowl or pie plate, combine graham cracker crumbs, cornflakes, and cinnamon.

In a separate shallow dish, whisk together eggs, brown sugar, milk, salt, and vanilla.

Dip each slice of brioche into the egg mixture, then press each side into the graham cracker and cornflake mixture.

Cook until brown and crispy, about 3 minutes per side.
