2 tbsps. extra-virgin olive oil
4 or more garlic cloves, smashed
1 tbsp. capers
¼ tsp. kosher salt, or more to taste
large pinch of crushed red pepper flakes
1 lb. fresh green beans, trimmed
½ cup or more cherry tomatoes or fresh tomatoes, diced
½ cup or more frozen pearl onions
1 tsp. dried mint; you could use fresh rosemary sprigs instead of mint
1 tsp. red wine vinegar or balsamic vinegar: depending on your taste, sharp or sweet, plus more as needed
freshly cracked black pepper to taste.

Using the sauté function, heat oil in the pressure cooker until hot.
Add garlic and sauté until golden brown on edges, 1-2 minutes.

Add capers, salt, and the red pepper flakes, and sauté for another few seconds.

Add the beans, tomatoes, pearl onions, and mint to the pot, stir.

Cover and cook on high pressure for 2 minutes for crisp beans and 3 minutes for fully cooked beans.

Release the pressure manually.

Stir in the vinegar, black pepper, and more salt to taste.

This Instant Pot recipe is based on Melissa Clark’s recipe for Italian Grandma-Style Green Beans included in her book, Dinner in an Instant. I'm a big fan of fresh green beans and love this Instant Pot version that requires so little work or time; certainly not the multiple-hour version my Georgia Grandma cooked.
