4 poblano chilies
2 eggs
Parmesan/Romano mix (fresh, grated) (or 4 cheese mix)
Monterey Jack cheese, shredded (or colby jack)
1/2 C salsa
1/2 lb ground beef
garlic paste (or minced garlic)
1/8 C all-purpose flour
3/4 C milk
1/2 rice, cooked
1/2 tsp salt

ROAST CHILIES:
Broil, flipping until black on all sides.
Once chilies are black, remove from oven & place in ziploc & seal. Let steam for 5 mins & peel off skins.
Cut a small slit down one side of each pepper & remove the seeds. (Don't tear pepper).

Brown meat with onion & garlic, drain & return to pan.
Add rice, Parmesan mix & salsa to the meat mixture & heat through.
Line a greased casserole dish with the chilies.
Stuff the chilies with the meat mixture & a little of the monterey jack.
Beat eggs & flour together until smooth. Add milk & salt & mix well.
Pour egg mixture over chilies & sprinkle with monterey jack.
Bake @ 350º for 45 mins or until knife comes out clean.
Let stand 5 mins before cutting.
