2 1/3 c all purpose flour
1/3 c whole wheat flour
1 1/2 tsp cinnamon
1/2 c brown sugar
1/2 c sugar
4 tsp baking powder
1 tsp salt
3/4 c butter, cold
2 eggs
1 tsp vanilla extract
1/8th tsp maple extract
1/2 c vanilla yogurt
1/2 c almond milk
2/3 c grated granny smith apple
1/2 c dried cranberries
Directions:
Directions:
Preheat oven to 400ºF. Line a large baking sheet with parchment paper.
Sift and then whisk together both flours, sugar, cinnamon, baking powder, salt.
Grate the chilled butter with a cheese grater into the dry ingredients and then cut in until mixture is crumbly.
Whisk together eggs, yogurt, almond milk, and extracts then pour into a well in the dry ingredients.
Stir gently with a fork, adding grated apple and craisins about 3/4 of the way through.
Scoop onto prepared baking sheet and bake until set on top, about 12 minutes. They should be just cooked through but not dried out.
Transfer to a cooling rack and glaze while still warm.
 

Almond Butter Glaze

Ingredients:

2 tbsp almond butter, softened
2 c icing sugar
1/4 c almond milk
Pinch salt
4 - 5 drops maple extract

Directions:

Whisk together all ingredients. Adjust with more almond milk or icing sugar to reach desired consistency.
Glaze warm scones generously and serve.
