2 lbs. chicken or beef sliced thin
1 1/2 t. salt
1 1/2 t. sugar
3/4 t. pepper
3 t. Chinese wine or substitute sherry
3 t. soy sauce
3 t. Canole oil or peanut oil
3 t. cornstarch

Pat meat dry with paper towels. Mix all the ingredients in a bowl. Add the meat and mix with your hands until well coated. Marinate at least 30 mi8niutes or overnight. Sauté at medium high heat.
