½ cup Ditalini Pasta
4 slices of bacon, diced (I used more)
1 Tbs. Olive Oil
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
½ cup red pepper, chopped
2 tsp. garlic, chopped
¼ tsp. crushed red pepper flakes
3 cans chicken broth (can adjust if you like it with more broth)
1 can diced canned tomatoes
1 can Cannellini beans, drained and rinsed
1 tsp. dried oregano
Salt and pepper to taste
Grated parmesan cheese to garnish

Directions:
Directions:
Heat a soup pot over medium heat and add bacon to saute until crisp. Drain off all by 1 Tbs. of bacon fat.

Add olive oil and onion and saute until softened. Add carrot and celery and saute for 5 minutes or until softened. Add red pepper, garlic, and red pepper flakes and saute for 2 more minute. Add chicken broth and tomatoes and bring to a simmer.

Then add beans (you can mash half of the beans with a fork, but I chose not to), oregano and ditalini. Stir soup and simmer uncovered for 10 minutes. Season with salt and pepper, sprinkle parmesan cheese for garnish and serve.
