Ingredients: 1 9-inch refrigerated pie pastry 1 cup of cheddar cheese, shredded ½ cup of swiss cheese, shredded 2 tbsps. all purpose flour ½ cup Half and Half ½ cup diced ham 5 eggs, beaten ¼ tsp. salt

Directions:Preheat the oven to 400ºF.
Press pastry into the bottom of a 9-inch pie plate. Bake in the preheated oven for 5 minutes. Poke holes in the pastry and continue cooking until lightly browned. Remove crust from the oven, reduce temperature to 350º.
Mix cheddar cheese, swiss cheese and flour in a small bowl. Spread cheese mixture over the warm crust. Spoon the ham over the cheese mixture.
Mix half and half, eggs, remaining flour and salt together in bowl. Pour mixture carefully over ham layer and top with remaining cheddar cheese.
Bake in oven for 40-50 minutes until set in the center. Cool before eating, about 10 minutes. |

Notes: In 1989 Hurricane Hugo was prepared to enter into Puerto Rico, a friend suggested a quiche recipe. I prepared this recipe the day before the storm, it was perfect during the storm and kept well in the fridge for several days after the storm, when we had no electricity. Whenever I prepare it, I am reminded of those days.
