2½ c flour
2 c sugar
1 Tbsp pumpkin pie spice
1 tsp baking soda
½ tsp salt
2 eggs, lightly beaten
1 c canned pumpkin puree
½ c vegetable oil (or applesauce)
2 c peeled, cored and chopped apple
2 Tbsp flour
¼ c. brown sugar
½ tsp cinnamon
4 tsp butter

Preheat oven to 350º. Lightly grease 18 muffin cups or use paper liners

In a large bowl, sift together flour, sugar, pumpkin pie spice, baking soda and salt.
In a separate bowl. mix together eggs, pumpkin and oil (or applesauce). Add pumpkin mixture into flour mixtures, stirring just until moist. Fold in apples. Spoon batter into prepared muffin cups.

In a small bowl, mix together 2 Tbsp flour, brown sugar, cinnamon. Cut in the butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffins.

Bake in preheated oven for 35 - 40 minutes, or until toothpick inserted comes out clean.

Cool on wire rack. Put in airtight container. Yummy!
