1 large cucumber
salt to taste
1 medium onion
Basic Dressing
black pepper
paprika

Directions:
Directions:
Slice large cucumber very fine on slicing blade of grater or mandolin. Salt generously and let stand for 15 minutes. Squeeze out as much of the juice as you can and place in serving bowl. Add 1 medium onion sliced very think lengthwise and pour on the Basic Dressing. Sprinkle with black pepper and paprika. Let stand 15 minutes before serving. The process of putting salt on the cucumbers helps draw the water out of cucumber so that it it is not so wet.

This was Andrew Adami's favorite cucumber salad. Grandpa Adami would not eat a lot of vegetables, but he loved this salad.
