2 cups sifted flour
2 teaspoons baking powder
1 1/2 teaspoon baking soda
2 teaspoons cinnamon
1 1/2 teaspoons salt
2 cups sugar
1 1/2 cups vegetable oil
4 eggs 2 cups inely grated carrots
1 8 1/2 ounce can crushed pineapple
1/2 cup chopped nuts
1 3 1/2 ounce can flaked coconut
Cream Cheese Frosting

Directions:
Directions:
Preheat oven to 350 degrees. Sift together flour, baking
powder, baking soda, salt and cinnamon. Add sugar,
vegetable oil and eggs; beat well. Add carrots, pinapple, nuts
and coconut. Pour into 3 9 inch greased cake pans. Bake 35
to 40 minutes. Cool cakes and frost with Cream Cheese
Frosting.
