1 1/4 lb. russet potatoes, scrubbed, dried and cut into 1" pieces
1 tbsp. olive oil
1 1/2 tsp. seasoned salt
3/4 tsp. paprika
3/4 tsp. dried Italian seasoning

Directions:
In a large bowl, combine the potatoes, olive oil, seasoned salt, paprika and Italian seasoning. Toss well to combine.
Heat an air fryer to 400 degrees for 2 minutes. Place the potatoes in the basket and cook for 10 minutes. Removing the basket and shake the potatoes. Return the potatoes to the air fryer for 8-10 more minutes, until crispy on the outside and tender on the inside. Serve immediately.

You can substitute baby potatoes, halved or cut into 1-inch pieces.

Once the potatoes are cut, soaking them in cold water for 30 minutes (or overnight) is a great way to remove the starch from the cut sides, thus allowing them to crisp up even more in the air fryer. (Just be sure to pat them very dry before cooking!)
