1 lb. steak
2 eggs, beaten
¾ cup cornstarch
½ cup water
veg oil
⅔ cup carrots, shredded
¼ cup ginger, chopped
4 garlic cloves, chopped
3 tbsps. soy sauce
2 tbsps. red/white wine
2 tbsps. white vinegar
1 tbsp. sesame oil
½ cup sugar
dash chili flakes

Directions:
Directions:
Slice steak across grain into narrow strips. Mix beef and eggs. Dissolve cornstarch in water and mix into beef and egg mixture. Pour 1" of oil into wok and bring to a boiling hot but not smoking. Add beef to oil ¼ at a time. Separate with fork, stirring and frying till very crispy. Remove and drain and set aside. Put 1 tbsp. oil in wok and add carrot, onion ginger, garlic and stir lightly over high heat. Add remaining ingredients, stir add beef and mix well.
