⅓ cup pancake mix (Aunt Jemima Complete or similar)
⅓ cup oatmeal (Maga Pecan and Spices).
If using plain oatmeal, add 1 tsp. cinnamon and 2 tbsp. chopped pecans, almonds, or walnuts.
⅓ cup oat bran hot cereal (Mother's)
½ cup mashed sweet potato (baked, no skin)
½ cup Greek yogurt (vanilla) triple zero
¾ cup ricotta cheese (low fat)
1 large egg
1 tbsp. melted butter
2 tsps. vanilla extract

Top with light syrup, chopped walnuts, fresh fruit or jam.

In large mixing bowl, combine all ingredients and mix well using a fork or spatula. Pour onto greased griddle or waffle maker on medium high heat until cooked through and nicely brown. Serve with favorite topping.

If too thick you can add low fat, almond, or oat milk to adjust consistency.

I prepare and freeze in single servings. Makes about 10 small cakes.
