6 oz carrots
1 green onion
2 cloves garlic
8 oz ground beef
Israeli couscous
3/4 C chicken stock
Dried apricots, chopped
Sliced almonds
Tunisian spice blend
olive oil
S&P to taste

Directions:
Directions:
Trim, peel, and thinly slice carrots on a diagonal. Trim and thinly slice green onion. Separate whites from hallow greens. Peel and finely chop garlic.

Heat a drizzle of olive oil over medium-high heat. Add carrots. Season with salt & pepper. Cook, stirring occasionally, until softened and lightly browned (4-5 minutes). Add beef. Cook, breaking up meat, until brown and cooked through (4-5 minutes). Drain out grease if needed.

Add green onion whites, garlic, and Israeli couscous to the pan with beef. Season with salt & pepper. Cook, stirring, until garlic is fragrant and couscous is slightly toasted (2-3 minutes). Stir in Tunisian spice blend.

Stir in chicken stock and apricots. Bring to a boil, then cover and reduce to low heat. Cook until couscous is tender (about 8-10 minutes). If too much liquid, uncover and cook down. Taste and season with salt.

Serve with green onions and sliced almonds.
