1 15.5 oz can chickpeas
2 eggs
3 oz baby spinach
1 oz sliced roasted red peppers
1 8 oz can tomato sauce
3 Tbsps Romesco sauce
4 oz grape tomatoes
Labneh cheese
feta cheese, crumbled
Za'atar spice
red peper flakes
salt & pepper

Serve with:
2 pitas
Za'atar spice
salt & pepper
drizzle of EVOO

Directions:
Directions:
Preheat the oven to 450°F.

Drain and rinse the chickpeas. In a baking dish, combine the spinach, tomatoes, drained chickpeas, tomato sauce, Romesco sauce, peppers, lots of za'atar, and red pepper flakes to taste. Add 1 tablespoon of water. Season with salt and pepper; stir to combine.

Crack the eggs into the pan on top of mixture. Season with salt and pepper. Tightly cover with foil and bake about 22 minutes.

Serve with crumbled feta and labneh on top.

Pitas:
Drizzle with EVOO; season with salt, pepper, and za'atar. Wrap in foil. Place directly onto an oven rack; warm about 5 minutes.
