2 cups sugar
1 cup pure pumpkin purée
3 tsp vanilla
3 large eggs
2 ½ cups flour
½ cup baking cocoa
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
¼ tsp baking powder
2 cups shredded zucchini
1 cup chocolate chips (optional)

Directions:

Preheat oven to 350º F
Grease 2 8x4 loaf pans

In a large bowl, beat sugar, pumpkin,eggs, & vanilla until we’ll blended.

Combine dry ingredients. Gradually beat dry into wet till well blended. Stir in zucchini and chocolate chips (if using).

Transfer to loaf tins. Bake for 50-60 minutes or until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before removing from pans to wire cooling racks.

Can be made into muffins, or a large pan as a “brownie” type cake.
Chocolate chips make the loaf fudgey.
