5 cups peaches diced
¾ cup sugar
½ cup ground cinnamon
¼ cup salt
2 tsp lemon juice

Batter

¼ cup butter
¾ cup flour
1 ½ tsp baking powder
¼ tsp salt
½ tsp vanilla
¾ cup milk, room temperature

Preheat oven to 350ºF

Put butter in a 8x8 baking pan, place it in the oven as it heats to melt butter.

Start filling by putting all the filling ingredients in a medium saucepan. Cook mixture over a medium heat, stirring occasionally until sugar dissolves and juices begin to boil.
Lower heat and continue to cook for 5 minutes.

Whisk the dry ingredients together.
Stir vanilla into milk.
Slowly add wet to dry.

Take pan from oven with melted butter. Pour batter over melted butter.
Spoon fruit filling evenly over batter including liquid.

Bake until cobbler is golden brown and bubbling. Approximately 35-45 minutes.

Cool and serve at room temperature.
