1/2 lb. sausage or hamburg
1/2 chopped onion
1 clove garlic, crushed
1/4 tsp. oregano
1 Tbsp. parsley, chopped
1/2 cup grated Romano cheese, divided
1/2 lb. mozzarella, diced
1 egg, beaten slightly
1/2 tsp. salt
1 box giant shells
1 slice bread, in pieces
1 large jar pasta sauce

Directions:

Heat oven to 350 degrees. Cook pasta until al dente; drain and rinse under cold water. Brown meat, onion and garlic in a skillet. Drain off fat. Stir in salt, oregano, bread, parsley, 1/4 cup sauce and 1/4 cup Romano. Cool slightly then mix in mozzarella and egg. Spread 1 cup sauce in bottom of 9X13-inch pan. Fill the shells with meat mixture; place in a single layer and cover with the remaining sauce. Cover with foil and bake 30 minutes. Remove the foil and sprinkle with the Romano cheese. Bake 10 minutes more.

Filling can also fill 8 manicotti shells. Occasionally, I will par-boil 4 lasagna noodles and cut them in half, add filling and roll up the noodles. Makes life a bit easier. This recipe is from Ragu back in the 1970's.
