½ cup flour
½ cup cornstarch
½ T. white pepper
2 T. oil
1 cup ice water
oil for frying
1½ lbs. shrimp
2 cups coconut

Directions:
Directions:
Combine flour, cornstarch and white pepper. Add oil and water. Dip shrimp in batter, then roll in coconut. Heat the cooking oil to 350ºF in a deep fryer or pan. Fry in hot oil about 4 minutes. Bake in a 300ºF oven for 5 minutes. Serve with Thai dipping sauce.
