Ingredients: 9" pre baked Pie Shell
⅓ cup Peanut Butter ¾ cup Powdered Sugar ½ cup Flour ⅔ cup Sugar ¼ tsp Salt 2½ cup Scalded Milk 3 Beaten Egg Yolks, Reserve Whites for Meringue 2 Tbsp. Butter ½ tsp. Vanilla

Directions:Combine Peanut butter and powdered sugar together into a crumbly mixture and set aside.
Mix flour, sugar and salt together into a large sauce pan. Gradually add the scalded milk and cook over medium heat, stirring constantly. Cook until the mixture thickens and boils. Cook for 2 minutes.
Remove from the heat.
Add small amount of mixture to the beaten egg yolks. Stir the egg mixture into the remaining hot mixture. Return to the heat and cook for about 1 minute until it bubbles. Be sure to stir constantly.
Add butter, vanilla, and 1 large heaping spoon of peanut butter. Stir well. Cool slightly.
Put all but ¼ cup of Peanut Butter and Powdered Sugar mixture into the bottom of the baked pie shell. Pour slightly cooled filling over the mixture.
Cover with Meringue. Top with the remaining Peanut crumb mixture and brown the meringue.

Notes: This recipe was shared with my family from a very close family friend for years, Jan Lower.
I also served this recipe when I was a baker at the Alcove Restaurant in Mount Vernon, Ohio.
There was also another peanut butter pie served there which was cream cheese based and served in a pecan crust. That recipe and pie was made by Norma Cramer and I do not have access to it.
