1 pkg. spinach, washed & torn into bite-sized pieces
2-3 hard boiled eggs, chopped
1small bunch green onions, chopped
12 to 15 cherry tomatoes, halved
1 carrot, grated
¼# fresh mushrooms, thinly sliced
½# bacon, cooked until crisp & crumbled

Dressing:
⅓ c. Corn oil
½ c. Red wine vinegar
⅛ c. water
¼ c. brown sugar
1 clove garlic, minced

Mix all the above ingredients in a large salad bowl, top with dressing just before serving and blend well.
