8½ c. Flour
½ tsp. Baking Powder
Water

Filling:
3 lbs. Ricotta Cheese
5 Eggs
1½-2 c. grated Romano Cheese
½ c. Parsley
Salt and Pepper

Directions:
Dough:
Combine eggs, flour, and baking powder in a large mixing bowl. Add enough water, a little at a time, to make a soft dough that can be rolled out on a large floured cutting board or counter top. Roll dough long enough and wide enough to be folded over after placing cheese on dough. Leaving enough dough to fold over cheese filling, place a spoonful of cheese filling on dough leaving a space between spoonfuls. Fold dough over top of cheese. Cut into individual ravioli. Using a fork, pinch the edges of dough together.

Cheese Filling:
In a large mixing bowl, combine ricotta cheese, eggs, grated Romano cheese, parsley, and salt & pepper to taste. Mix well.
