1 1/2 c. seasoned breadcrumbs
2 medium eggplants (about 1 1/2 lbs.), cut into 1/2 thick slices
1 jar (23.5 oz.) Marinara Sauce
2 c. shredded mozzarella cheese (about 8 oz.)
2 tbsp. grated Parmesan cheese

1. Preheat oven to 400º.

2. Sprinkle salt on both sides of eggplant. Layer slices in a colander and place in sink. Place a heavy dish or pot on top to press. Let sit for 30-45 minutes. Rinse slices well in cold water and pat dry with paper towels.

3. Beat the eggs in a shallow bowl with a fork or whisk. Place the breadcrumbs on another dish. Dip the eggplant slices into the egg and coat with breadcrumbs. Place the eggplant slices onto a baking sheet.

4. Bake for 30 minutes, turning the eggplant over once halfway through the baking time.

5. Spray a 2-quart baking dish with vegetable cooking spray. Spread 1/2 cup sauce in the bottom of the dish. Layer half the eggplant, 1 cup of sauce, 1 cup of mozzarella cheese and 1 tbsp. Parmesan cheese in the dish. Repeat the layers once more.

6. Bake for 25 minutes or until hot.
