3-pound Fresh Salmon
1 cup white wine
1 cup water
Garlic Pepper, to taste
Salt, to taste
1 cup Mayo
1/2 cup lemon juice
1 cup chopped onions & peppers, sautéed
2 eggs
1 cup Panko breadcrumbs
1 squirt Sriracha hot sauce opt

Directions:
Directions:
Place salmon into a 9x13 or 11x14 baking dish. Add wine and water, poach in the oven at 350º for 1 hour or until opaque. cool and reserve 1/2 cup liquid.

Mix mayo and lemon juice. Add salt and garlic pepper to taste. set aside.

Mix eggs with reserved liquid. Add salmon, sautéed onions & peppers, salt & pepper to taste, and hot sauce. Mix well. Form into patties and roll in Panko breadcrumbs.

Bake on greased parchment paper at 350º for 20 minutes. Serve with Lemon Mayo. Also, great served on Caesar Salad

We got this recipe from the Chef at work. Whenever he could get fresh salmon at a good price, he would make these.
