1 lb pork or chicken cut into bite size strips
2 cups basmati or other long grain rice
1 onion, chopped
1 lb carrots finely diced
1 lb bag of frozen peas
6-7 eggs beat for scrambling and seasoned with salt & pepper
Soy sauce & sesame oil

Directions:
Directions:
Slightly undercook rice using preferred method
Saute meat in sesame oil until cooked through, then drain and set aside
Add sesame oil to clean skillet and saute onions until tender and clear
Stir in carrots with onions, lightly coat with soy sauce and cook until the carrots start becoming tender
Add peas into the mix and cook for an additional minute, turn heat on skillet to low
Add sesame oil to wok and heat thoroughly on high
Add beaten eggs to the wok and stir constantly until they begin to scramble
Quickly add rice to the wok, coat generously with soy sauce, and continue to stir until rice is uniformly covered in soy sauce
Add the vegetable mix to the wok while continuing to stir constantly
Add meat to the wok, stir constantly for about another minute, then quickly remove from heat
