~ 1 lb boneless chicken cut into bite size pieces
2 cups basmati or other long grain rice
~ 1 lb broccoli florets or 3 broccoli stalks cut into bite size pieces
1 average sized onion diced
~ 8 oz sliced mushrooms
3 10.5 oz cans of cream of mushroom/broccoli/onion soup
2 to 4 cups of shredded sharp cheddar cheese
Salt, pepper, garlic powder, and other preferred seasoning

Prepare an oven safe baking dish and add the chicken mix, cooked rice, cans of cream soup, and shredded cheese together, mix thoroughly
Bake at 400° fSlightly undercook rice using preferred method
Season and lightly cook chicken in large skillet or wok on medium heat until no longer raw, then stir in mushrooms
Once mushrooms shrink down, stir in onion and cook until until onions become tender and clear
Stir bror 25-35 minutes
