1/2 cup butter
1/2 flour
4 cups milk
4 cups chicken broth
1 finely chopped onion
2 larger or 3 smaller chopped heads of broccoli (6-8 cups)
1 package matchstick or crinkle cut carrots (10oz)
3 diced celery stocks
5-6 cup sharp cheddar cheese
Salt/Black pepper seasoned to taste

1. Melt butter in large saucepan & saute onions until translucent
2. Slowly wisk in flour - adding milk as needed to prevent the roux from getting to thick
3. Add the rest of the milk and chicken broth, wisking constantly -simmer ~20 minute
4. Stir in broccoli, carrot and celery& simmer for another another ~ 20 minutes
5 Reduce the heat to low and stir in the sharp cheddar cheese until melted
6. Season to taste with salt and pepper
