Day 1:
10 cups grated zucchini or cucumber
2 cups chopped green pepper
4 cups chopped onion
5 tablespoons salt


Day 2:
4 cups sugar
2 1/2 cups vinegar
2 teaspoons celery seed
1 teaspoon turmeric
1/2 teaspoon black pepper
1 teaspoon prepared mustard

Day one:
Put first 3 ingredients in enamel pan, sprinkle the salt over them, let set and covered overnight.

Day two:
Drain well, rinse well with cold water. Drain well again, then mix the rest of the ingredients together in a large non-aluminum pot.

Simmer 30 minutes. Stirring often.

Ladle hot relish through funnel into hot sterilized jars, leaving 1/2in headspace cover with lids and bands.

Process jars in large pot simmering water for 15 minutes. Jars should be covered by 1 inch of water.

Let sit 2 weeks before using.
