1/2 bush tomatoes
2 lbs. carrots
1 bunch celery
2 sticks butter
2-3 cloves garlic
3 lbs. onions
2 red or green peppers
2 tablespoons dry parsley
1 cup cornstarch
2 cups sugar
1/4 cup salt

Directions:
Directions:
Blanch and peel Tomatoes. Combine vegetables in a large and cook till mushy. Use immersion blender or hand blender to puree vegetables, set aside.

Combine cornstarch, sugar, and salt with enough juice to make a paste. Then combine with vegetable mixture. Simmer 20 minutes stirring often.

Put in jars. Process at 10 lbs. for 20 minutes.
