1-gallon medium sized cucumbers
6 medium onions, sliced thinly
3 cloves garlic, optional
1/2 cup pickling salt

Syrup:
4 cups 5% white vinegar
4 cups sugar
1 1/2 teaspoon turmeric
2 tablespoons mustard seed
1 1/2 teaspoons celery seed

Directions:

Cut cucumbers and peeled onion into uniform thin slices. Chop garlic. Place in large bowl. Pour salt over cucumbers.

Cover with ice and let stand for 3 hours or place in the refrigerator for 12 hours, covered with a weighted lid. Drain, rinse in cold water, drain again.

Prepare the syrup: Add all syrup ingredients in a medium size pot, bring to a boil.

Add cucumbers & onions. Heat to scalding point, DO NOT BOIL. Pour hot cucumber & onions into hot jars.

Seal and process 15 minutes in a boiling water bath.
