2 lb. chicken tenderloin chunks (or I use 4 chicken thighs
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce

Combine ingredients. Put in crockpot. Cook on low for 6-8 hours. Serve over rice.

The ingredients make a great marinade for skewers of chicken chunks, green peppers, red onions and fresh pineapple chunks, cooked over the grill. Baste as you turn.
