- 1/4 cup low sodium soy sauce
- 1 cup chicken broth
- 1 TBL cornstarch
- 2 TBL mirin
- 1 TBL sugar
- 2 tsp sesame oil
- 1 TBL canola oil
- 1 TBL minced garlic
- 1 TBL minced ginger
- 1 lb chicken breast (sliced thin)
- 2 cup zucchini (cut in 1/4 inch half moons)

Directions:

1. In a large bowl, add soy sauce, chicken broth, cornstarch, mirin, sugar and sesame oil and whisk until everything is completely dissolved.

2. In a large skillet add canola oil and cook all chicken and set aside on plate.

3. Add in garlic and ginger and cook for 30-45 seconds.

4. Add sauce into garlic/ginger mixture and cook for 1 minute. Add zucchini and cook for another 2 minutes. Remove from heat and add chicken. Coat with sauce.
