Pocket Stew Foil Dinner Recipe

Ingredients: Heavy Duty aluminum foil 1 hamburger patty 1 small potato peeled and cut to bite sized pieces (about 1/2 c) 1/2 carrot peeled and cut into pieces slightly smaller than potato bites Onion slice or a few rings 1 pat of butter salt and pepper ketchup if desired

Directions:Lay out aluminum foil in about 14x14 inch piece Place the hamburger patty on foil Place chopped vegetables and onion on top of hamburger Salt and pepper to season Add pat of butter if desired
Fold foil to seal tightly. (Take opposite sides, fold together two or three folds and then close ends.
Place stew on hot coals for ten or fifteen minutes. Usually it will sizzle a bit. Turn over with use of tongs or hot pads. Cook about 5 minutes more. It is alright to pull off of heat and check progress. When vegetables are tender, it is ready to eat. Be sure to reseal tightly if it is put back on heat. After opening to eat, season more as needed and use ketchup if desired. |

Notes: The pocket stew was often used for our first meal when camping because it could be prepared ahead of time and just put on the hot coals. Barbara's parents taught her to make this when she was a girl scout.
Barbara's father was a foil dinner expert and would bring wheel barrels with hot coats to church, scout or city demonstrations. He was famous for volcano chicken which was cooked with a hot rock inside the cavity of a chicken and then put on the coals. In the picture included is a picture of Lloyd Fish (Barbara's father) with about eight different dishes cooked on hot coals.
