Using a 12 inch Dutch Oven
5 to 7 pounds of red potatoes (or peeled russet potatoes) thinly sliced
1/2 pound of bacon (or up to one pound depending on how much you like)
3 medium onions thinly sliced and separated into rings
Salt and pepper to taste

Directions:
Directions:
Keep sliced potatoes in water to prevent darkening then drain to cook
Fry up bacon in hot Dutch oven and remove from grease
Put potatoes and onions into oven in hot grease layering as you go
Put oven on hot coals and add coals to top
Cook until done, turning occasionally
Add bacon (crumbled) and season with salt and pepper

When Jacobson girls were young, they often visited Aunt Kay and Uncle Steve. Kay would prepare the potatoes for cooking and Uncle Steve cooked them. They were always delicious and fed a big family
