2 cups Crumbled Gingersnap Cookies
3 tbsp. Salted Butter, melted

1. Preheat oven to 350º and line a 9x9 baking pan with aluminum foil, lightly spray with nonstick spray

2.Pour the gingersnap crumbs into a bowl and mix with the melted butter. Press mixture into the baking pan.

3. Bake for 10 minutes
 

Key Lime Filling

4 oz. Cream Cheese, softened
4 Large Egg Yolks
14 oz. Sweetened Condensed Milk
½ cup Key Lime Juice
2 tsp. Lime Zest

Directions:
Directions:
1. Beat the cream cheese on high speed until smooth. Beat in the egg yolks, scraping down sides as needed. Beat in the sweetened condensed milk, lime juice, and lime zest until combined. Pour into the crust

2. Bake for 15-18 minutes, until edges of the bars begin to brown.Allow to cool to room temperature the place in the refrigerator for at least 2 hours

3. Lift the foil out and cut into squares
